Appelsiini-murokeksit/ Orange Shortbread Cookies


Herkulliset rapeat appelsiinimurokeksit tummalla suklaalla höystettynä. Alkuperäinen ohje on Kinuskikissalta, jonka olen muokannut appelsiiniseksi versioksi. Taikina leviää hieman uunissa, joten tämä kannattaa ottaa huomioon, jos haluaa tehdä kuviokeksejä.


Appelsiini-murokeksit:
125g normaalisuolaista voita huoneenlämpöisenä
135g (150ml) sokeria
1 muna
162g (250ml) vehnäjauhoja
1tl leivinjauhetta
1tl appelsiinin raastettua kuorta
2ml vaniljasokeria (2 maustemittaa)

Koristeluun:
Fazerin taloussuklaata


Valmista keksit:

1. Vatkaa voi ja sokeri kuohkeaksi vaahdoksi.

2. Lisää muna ja vatkaa hyvin sekaisin.

3. Kääntele joukkoon appelsiinin raastettu kuori.

4. Sekoita keskenään vehnäjauhot, leivinjauhe ja vaniljasokeri. Siivilöi taikinan joukkoon sopivissa erissä ja sekoita tasaiseksi.

5. Kaada taikina kelmun päälle ja suojaa hyvin. Anna kovettua jääkaapissa vähintään parituntia (Annoin omani kovettua yön ylitse). 

6. Ota käsiteltäväksi pieni pala taikinaa kerralla, sillä pehmetessään sitä on vaikeampi käsitellä. Kauli taikinasta n. 3 mm paksu levy ja leikkaa haluamallasi muotilla kuvioita taikinasta. Aseta keksit leivinpaperin päälle pellille.

7. Koosta riippuen paista keksejä n. 5-8 min uunin keskitasolla 200 asteessa. Anna keksien jäähtyä (annoin keksieni olla pari päivää ilmatiivissä rasiassa ennen niiden koristelua). 

8. Sulata suklaa ja koristele keksit haluamallasi tavalla. Itse sulatin ensin 2/3 osan suklaasta, jonka jälkeen lisäsin joukkoon loput 1/3 osan suklaasta ja hieman extraa hienoksi rouhittuna. Näin suklaa kesti hyvin huoneenlämmössäkin.  



Orange Shortbread Cookies

Delicious crispy orange flavored cookies with dark chocolate. Original recipe is from Kinuskikissa, which I have modify orange version. The dough will spread slightly in the oven, so this should be taken into account if you want to make shape cookies.


Orange Shortbread Cookies:
125g normally salted butter in room temperature
135g (150ml) sugar
1 egg
162g (250ml) all-purpose flour
1 teaspoon baking powder
1 teaspoon finely grated orange zest
2ml vanilla sugar

Decoration:
Dark chocolate


Prepare cookies:

1. Put into bowl sugar and butter. Whisk with had held mixer until fluffy.


2. Add egg and whisk well.

3. With rubber spatula fold in orange zest.

4. Stir together flour, baking powder and vanilla. Sift trough sieve into the mixture in suitable batches and mix.

5. Pour your cookie dough onto plastic warp and warp well. Lift in the fridge. Allow to stand at least a couple of hours that dough hardens (I gave mine to harden over night). 

6. Take small piece of dough from the fridge at once, because when it softens it will be more difficult to process. Roll out the dough in floured table approx. 3 mm thick sheet. Cut figures from the dough and put on the baking paper over the baking tray. 

7. Depending on the size of the cookies bake them 5-8 mins in the middle level of the oven at 200 C (392 F) degrees. Let cookies cool down (before decorating I gave my cookies to be in an airtight container for a few days).

8. Melt chocolate and decorate cookies the way you want. I melted first 2/3 of the chocolate and after it I added remaining 1/3 of the chocolate and a bit extra finely grated. This way chocolate lasted well at room temperature too.

Sitruuna-perunajauhokakku/ Lemon-Potato Flour Cake


Sain lahjaksi minikakkupellin, jota testasin tähän sitruuna-perunajauhokakun reseptiin. Tuloksena syntyi suloisia, herkullisia ja koostumukseltaan pehmeitä kakkuja. Ohje on yhdistetty Kaikkijuhlista.fi sivuston ja Hyvää ruokahalua blogin ohjeista. Tein allaolevasta ohjeesta puolet ja sillä sain noin kaksi pellillistä minikakkuja. 


Kakku:
200g normaalisuolaista voita huoneenlämpöisenä
180g (2dl) sokeria
105g (1 1/2dl) perunajauhoja
3 kananmunaa
2tl sitruunan kuorta hienoksi raastettuna
50ml sitruunamehua
98g (1 1/2dl) vehnäjauhoja
2tl leivinjauhetta
2tl vaniljasokeria

Koristeluun:
Tomusokeria

Puolet yllä olevasta ohjeesta:
100g normaalisuolaista voita
90g sokeria
52g perunajauhoja
80g kananmunaa
1tl sitruunan kuorta hienoksi raastettuna
25ml sitruunamehua
49g vehnäjauhoja
1tl leivinjauhetta
1tl vaniljasokeria


Tee näin:

1. Vaahdoita keskenään voi, sokeri ja perunajauhot. Lisää seoksen joukkoon kananmunat yksitellen voimakkaasti vatkaten.

2. Kääntele nuolijalla joukkoon sitruunankuoriraaste ja puristettu sitruunamehu.

3. Sekoita keskenään vehnäjauhot, leivinjauhe ja vaniljasokeri. Siivilöi taikinan joukkoon sopivissa erissä ja kääntele taikina tasaiseksi.

4. Voitele ja jauhoita vuoka. Kaada taikina vuokaan ja paista 175 asteisessa uunissa n. 45 minuuttia. Tarkista kypsyys tikulla. Anna jäähtyä, kumoa ja kelmutahyvin. Anna maustua jääkaapissa pari päivää. Tehdessä minikakkuja taikina kannattaa pursottaa vuoan koloihin ja paistaa 175 asteisen uunin keskitasolla noin 6-10min (omia minikakkujani paistoin noin 6-7min). Minikakkuni laitoin ilmatiiviiseen rasiaan ja annoin maustua jääkaapissa pari päivää.

5. Tarjoile kakku huoneenlämpöisenä ja koristele halutessasi tomusokerilla. 




Lemon-Potato Flour Cake

I got as a gift a mini cake pan, which I tested on this lemon-potato flour cake recipe. As a result became cute, delicious cakes with soft texture. Recipe is compound from Kaikkijuhlista.fi website and Hyvää ruokahalua blog recipes. I made half of the below recipe and I got about two baking trays of mini cakes.


Cake:
200g normally salted butter room temperature
180g (200ml) sugar
105g (150ml) potato flour
3 eggs
2 teaspoon finely grated lemon zest 
50ml lemon juice
98g (150ml) all-purpose flour
2 teaspoon baking powder 
2 teaspoon vanilla sugar

For decoration:
Icing sugar

Half of the dough above:
100g normally salted butter room temperature
90g sugar
52g potato flour
80g eggs
1 teaspoon of lemon zest
25ml lemon juice
49g all-purpose flour
1 teaspoon baking powder
1 teaspoon vanilla sugar


Do this:

1. Whisk together soft butter, sugar and potato-flour with hand held mixer. Add eggs one by one, whisking strongly after each one. 

2. Add grated lemon zest and lemon juice to your foam and fold in.

3. Mix all-purpose flour, baking powder and vanilla sugar together. Add flour mixture to your foam gradually through the sieve and fold in gently. Stir until just combined, do not over mix. 

4. Grease and flour your cake tin. Spoon dough into your cake pan and bake at 175 C (350 F) degrees oven about 45 mins. Use toothpick to check when your cake is done. Allow to cool and flip the cooled cake. Cover cake well with plastic warp and put it in plastic bag and let it taste in the fridge for couple days. While making mini cakes dough is good to pipe in the pans hole. Bake your mini cakes in 175 C (350 F) degree oven in the middle level for about 6-10 mins (I baked mine for about 6-7 mins). I put my mini cakes in an airtight container and let them taste in the fridge for couple of days.

5. Serve your cake in room temperature and decorate with icing sugar if you want.

Suklaa macaronit Ferrero Rocher tryffeli täytteellä/ Chocolate Macarons With Ferrero Rocher Truffle filling


Halusin tehdä macaroneihin Ferrero Rocher täytteen. Netistä en löytänyt mieleistäni ohjetta, joten päätin kokeilla omaa ideaani. Täytteestä tuli herkullista :) Macaron kuorien ohje on Painted By Cakes blogista. Jos tykkäät Ferrero Rocheista suosittelen kurkkaamaan myös Nutella-Ferrero Rocher brownies sekä Nutella Ferrero Roche juustokakun reseptit. 


Suklaa macaronit: 
80g mantelijauhetta
140g tomusokeria
10g kaakaojauhetta
20g erikoishienoa sokeria
70g kananmunan valkuaista

Ferrero Rocher tryffeli täyte:
80ml Kuohukermaa
1tl juoksevaa hunajaa
60g Fazerin sinistä maitosuklaata
60g Fazerin taloussuklaata
35g Nutellaa
4 Ferrero Rocher tryffeliä
13g huoneenlämpöistä normaalisuoaista voita

Koristeluun:
esim. sulatettua suklaata nutellalla maustettuna sekä paahdettua hasselpähkinärouhetta 


Valmista macaronit: 

1. Siivilöi tiheän siivilän läpi kulhoon 80g mantelijauhetta. Siivilään saattaa jäädä mantelinpaloja, heitä ne pois.

2. Laita mantelijauhe, tomusokeri ja kaakaojauhe monitoimikoneeseen. Sekoita, kunnes ne ovat kunnolla sekaisin. 

3. Siivilöi manteliseos kulhoon.

4. Erottele toiseen kulhoon 70g valkuaista huoneenlämpöisistä kananmunista. 

5. Vaahdota valkuaisia sähkövatkaimella, kunnes muodostuu kuohkea vaahto. 

6. Lisää erikoishieno sokeri vähitellen vaahtoon voimakkaasti vatkaten. Jatka vatkaamista, kunnes vaahto on jämäkkää ja muodostaa teräviä huippuja. 

7. Lisää vaahtoon noin 1/3 osa manteliseoksesta varovasti kiertäen nuolialla kulhon ympäri ja vaahdon alta ja sitten leikkaamalla vaahtoa. 

8. Lisää samalla tavalla käännellen loput manteliseoksesta kahdessa erässä. Massasta tulee melko jämäkkää, mutta massa pehmenee, kun jatkat kääntelyä ja leikkaamista. 

9. Kun nuolijasta pudotettu kuvio tasoittuu noin 30 sekunnissa, lopeta kääntely.

10. Kaada taikina pursotinpussiin, jossa on 1 cm tai 1,2 cm kokoinen pyöreä tylla ja pursota pellille leivinpaperin päälle noin 2-3 cm kokoisia nokareita, halutusta koosta riippuen. Jotta ilmakuplat hajoavat, pudota pelti pari kertaa noin 10 cm korkeudelta pöydälle.

11. Anna macaronien seistä huoneenlämmössä, kunnes kuorien pinta on kosketuskuiva n. 30-60 min.

12. Kuumenna uuni 140 asteeseen ja paista macaroneja uunin keskitasolla noin 15 minuuttia. Tarkista ensimmäisen 5 minuutin kuluttua alkavatko kuoret tummua liikaa ja tarvittaessa säädä uunin lämpötilaa. (Tein halkasijaltaan 2,5cm macarone ja ja paistoin niitä n. 137 C asteessa n. 14 min).


13. Ota macaronit pois uunista, kun kuorien alareunaan muodostunut jalka ei hylly nostettaessa kuorta varovasti leivinpaperista. Anna macaronien jäähtyä uunipellillä noin 10 minuuttia ja siirrä ne sitten ritilälle jäähtymään.



Valmista tryffelitäyte:

14. Rouhi suklaat hienoksi rouheeksi ja pistä kulhoon. Lisää suklaiden päälle Nutella.

15. Murskaa haarukan ja veitsen avulla Ferrero Rochet hienoksi. 

16. Laita kattilaan kuohukerma sekä hunaja ja kuumenna kiehuvaksi.

17. Ota kattila pois liedeltä ja kaada kuuma kerma rouhittujen suklaiden päälle. Kääntele seos nuolijalla tasaiseksi. Lisää voi ja kääntele tasaiseksi. Lopuksi lisää murskatut Ferrero Rochet ja kääntele tasaiseksi. Anna jäähtyä huoneenlämmössä 2-3h tai käytä hetki jääkaapissa. 

18. Pursota täytettä kuoren pohjalle ja nosta toinen kuori päälle kanneksi. Anna macaronien vetäytyä jääkaapsissa vähintään muutama tunti ennen tarjoilua. Jos haluat, koristele macaronit.






















Chocolate Macarons With Ferrero Rocher Truffle filling

I wanted to fill my macarons with Ferrero Rocher filling. I didn`t find anything for my taste from internet, so I decided to try my own idea. Filling became delicious :) Macaron shell recipe is took from Painted By Cakes blog. If you like Ferrero Rochers I recommend you also look Nutella-Ferrero Rocher Brownies and Nutella Ferrero Rocher Cheesecake recipes.


Chocolate macarons:
80g finely ground almonds
140g icing sugar
10g unsweetened cocoa powder
20g caster sugar 
70g egg whites

Ferrero Rocher Truffle filling:
80ml whipping cream
1 teaspoon running honey
60g milk chocolate 
60g dark chocolate (I usee 44%)
35g Nutella
4 Ferrero Rocher truffle
13g room temperature butter

For decoration:
E.g melted chocolate with hint of Nutella and rosted hazelnuts


Prepare macarons:

1. Sift trough thin sieve ground almonds in to bowl until you get 80g. Into sieve may left some peaces of ground almonds, throw those away.

2. Put icing sugar, finely ground almond and cocoa powder in a food processor and blend until ingredients are thoroughly combined. 

3. Sieve the mixture into a bowl. 

4. Separate for another bowl 70g of egg whites from room temperature eggs. 

5. Whisk egg whites with electric mixer until the foam is spongy.

6. Add sugar gradually into foam whisking vigorously. Continue whisking until the foam is robust and forms sharp peaks.

7. Fold in gently with rubber spatula about 1/3 part of the almond mixture into the foam. Turn spatula around bowl and under the foam and then cutting over the foam.

8. Fold in the same way the rest of the almond mixture in two batches. Pattern becomes quite robust, but softens when you continue folding and cutting. 

9. When small amount of pattern dropped from the spatula flatten in about 30 seconds, stop turning, your pattern is ready.

10. Pour batter into cake decorating bag with diameter of 1 cm or 1,2 cm sized circular piping nozzle and pipe about 2-3 cm size pats on to baking paper over the baking tray. In order to break down the air bubbles, drop the baking tray a couple of times from about 10 cm height to the table.

11. Allow macarons stand at room temperature until the shells surface is dry to the touch approximately 30-60 mins. 

12. Bake macarons in the middle level of the oven in 140 C (284 F) degrees for about 15 minutes. Check after the first 5 minutes if the shells start to darken too much, and if needed adjust the temperature of the oven. (I made 2,5 cm macarons and I baked them in about 137 C degree oven for about 14 min).

13. Take macarons out of the oven when the foot which is formed at the bottom of the shell is not quake while gently lifting the shell from the baking paper. Let Macarons cool down over the baking tray about 10 minutes and then transfer them to cool on wire rack.


Prepare truffle filling:

14. Chop finely both chocolates into bowl. Add Nutella.

15. With fork and knife crush Ferrero Rochers untill fine.

16. Put in a saucepan whipping cream and honey and bring to boil.

17. Remove the saucepan from the heat and pour the hot cream over the chocolate. Fold in gently with rubber spatula until mixture is smooth. Add butter fold in gently with rubber spatula until mixture is smooth. Finally add the crushed Ferrero Rochers and fold in gently with rubber spatula until mixture is smooth. Allow to cool at room temperature for 2-3 hours or place in the fridge for a while. 

18. Pipe filling top of the shell bottom and lift another shell as cover. Let macarons rest in the fridge at least few hours after filling before serving them. If you wish decorate your macarons.

Kaneli-mantelikeksit/ Cinnamon-Almond Cookies































Näiden ihanien kaneli-mantelikeksien alkuperäinen ohje on Facebookin Leivotaan ryhmästä otettu. Alkuperäistä ohjetta muutin käyttämällä mantelijauhojen sijasta mantelijauhetta ja käytin normaalikokoisen kananmunan keltuaista ison sijasta. Nämä keksit ovat helppo tehdä ja ovat oikein herkullisia :)  


Keksit: (n. 40kpl)
200g normaalisuolaista voita sulatettuna
200g sokeria
1 kananmunan keltuainen
1rkl (15ml) tummaa siirappia
1tl (5ml) kanelia
1 1/2tl (7,5ml) vaniljasokeria
2tl ruokasoodaa
227g (350ml) puolikarkeita vehnäjauhoja
35g (50ml) perunajauhoja
27g (50ml) mantelijauhetta


Tee näin:

1. Lisää jäähtyneen sulatetun voin joukkoon keltuainen ja siirappi.

2. Siivilöi vehnäjauho ja perunajauho kulhoon. Sekoita muut kuivat aineet joukkoon. Lisää voiseos ja sekoita tasaiseksi, sekoita vain kunnes ainekset ovat sekoittuneet.

3. Pyöritä taikinasta palloja (itse käytän apuna 2tl OXO cookie scooppia) ja aseta ne leivinpaperin päälle pellille, jätä leviämisvaraa. Huom! älä litistä palloja.

4. Paista keksejä uunin keskitasossa 150 asteessa n. 10-15 min, kunnes ne ovat saaneet hieman väriä (paistoin omiani 11 min).

5. Uunista otettua voit tarvittaessa painaa keksiä kevyesti lusikalla tai haarukalla. Anna jäähtyä n. 5 min pellillä ja siirrä sitten ritilälle jäähtymään.

6. Säilytä ilmatiiviissä rasiassa.  


Cinnamon-Almond Cookies

This lovely Cinnamon-almond cookie recipe is took from Facebook Leivotaan group. I have modify original recipe by using ground almonds instead of almond flour and I use normal size egg yolk instead of big one. These cookies are easy to make and are so delicious :)


Cookies: (approx. 40 cookies)
200g normally salted butter melted 
200g sugar
1 egg yolk
1 tablespoon (15ml) dark syrup
1 teaspoon (5ml) cinnamon
1 1/2 teaspoon (7,5ml) vanilla sugar
2 teaspoon baking soda 
227g (350ml) all-purpose flour
35g (50ml) potato starch
27g (50ml) ground almonds


Do this:

1. Add egg yolk and dark syrup into cooled melted butter.

2. Sift into the bowl all-purpose flour and potato starch. Mix in rest of the dry ingredients. Add butter mixture and mix until smooth, mix only as much is needed. 

3. Roll the dough into balls (I use the 2 tsp. OXO Cookie Scoop) and place them over baking tray which is lined with baking paper. Leave enough space between cookies while those will spread. NB! Do not flatten the balls.

4. Bake the cookies in the middle level of the oven in 150 C (302 F) degrees approx. 10-15 minutes, until they have received little color (I baked my cookies for 11 minutes).

5. After taken out of the oven, if necessary, you can press cookies lightly with a fork or spoon. Allow to cool for approx. 5 min on the baking tray and then move to the rack to cool.

6. Store in an airtight container.
