Piparkakku macarons/ Gingerbread Macarons



















Nämä macaronit sopivat mukavasti vaikka glögin kanssa herkuteltavaksi. Tällä ohjeella osallistuin Dr. Oetkerin Kultaisen joulukalenterin tekoon. Iloiseksi yllätykseksi sain kuulla, että resepti valittiin luukkuun numero 12. Palkinnoksi sain heidän tuotepaketin ja odotankin jo innolla, että pääsen heidän tuotteitaan testaamaan :) Piparkakku macaronien pohjana toimii Painted By Cakes blogin macaron ohje, jota olen käyttänyt myös näissä herkullisissa Suklaa macaroneissa appelsiinitryffelitäytteellä. Tällä kertaa jätin macaron ohjeesta kaakaojauhon pois ja lisäsin sen tilalta jouluisia mausteita. Täytteenä on ihanista Fazerin Joulusuklaa-konvehdeista tehty suklaatäyte.


Piparkakku macarons:
80g mantelijauhetta
140g tomusokeria
3ml jauhettua kanelia (1ml=1 maustemitta)
2ml jauhettua neilikkaa
2ml jauhettua inkivääriä
ripaus kardemummaa
20g erikoishienoa sokeria
70g kananmunan valkuaista

Joulusuklaatäyte:
60g kuohukermaa
3/4tl juoksevaa hunajaa
120g Fazer Joulusuklaa-konvehteja

Koristeluun:
esim. pieniä piparkakkuja tai sulatettua suklaata/pikeeriä ja koristerakeita kuten Dr. Oetker Silver


Valmista macaronit:


1. Siivilöi tiheän siivilän läpi kulhoon 80g mantelijauhetta. Siivilään saattaa jäädä mantelinpaloja, heitä ne pois.

2. Laita mantelijauhe, tomusokeri ja mausteet monitoimikoneeseen. Sekoita, kunnes ne ovat kunnolla sekaisin. Jos et omista monitoimikonetta siivilöi tomusokeri mantelijauheen joukkoon ja lisää mausteet. Sekoita kunnolla sekaisin. 

3. Siivilöi manteliseos kulhoon.

4. Erottele toiseen kulhoon 70g valkuaista huoneenlämpöisistä kananmunista.

5. Vaahdota valkuaisia sähkövatkaimella, kunnes muodostuu kuohkea vaahto.

6. Lisää erikoishieno sokeri vähitellen vaahtoon voimakkaasti vatkaten. Jatka vatkaamista, kunnes vaahto on jämäkkää ja muodostaa teräviä huippuja.

7. Lisää vaahtoon noin 1/3 osa manteliseoksesta varovasti kiertäen nuolialla kulhon ympäri ja vaahdon alta ja sitten leikkaamalla vaahtoa.

8. Lisää samalla tavalla käännellen loput manteliseoksesta kahdessa erässä. Massasta tulee melko jämäkkää, mutta massa pehmenee, kun jatkat kääntelyä ja leikkaamista.

9. Kun nuolijasta pudotettu kuvio tasoittuu noin 30 sekunnissa, lopeta kääntely.

10. Kaada taikina pursotinpussiin, jossa on 1 cm tai 1,2 cm kokoinen pyöreä tylla ja pursota pellille leivinpaperin päälle noin 2-3 cm kokoisia nokareita, halutusta koosta riippuen. Jotta ilmakuplat hajoavat, pudota pelti pari kertaa noin 10 cm korkeudelta pöydälle.

11. Anna macaronien seistä huoneenlämmössä, kunnes kuorien pinta on kosketuskuiva n. 30-60 min.

12. Kuumenna uuni 140 asteeseen ja paista macaroneja uunin keskitasolla noin 15 minuuttia. Tarkista ensimmäisen 5 minuutin kuluttua alkavatko kuoret tummua liikaa ja tarvittaessa säädä uunin lämpötilaa. (Tein halkasijaltaan 2,5cm macarone ja ja paistoin niitä noin 137 C asteessa noin 14 min).

13. Ota macaronit pois uunista, kun kuorien alareunaan muodostunut jalka ei hylly nostettaessa kuorta varovasti leivinpaperista. Anna macaronien jäähtyä uunipellillä noin 10 minuuttia ja siirrä ne sitten ritilälle jäähtymään.
 


Valmista Joulusuklaatäyte:

14. Rouhi hienoksi rouheeksi kulhoon Joulusuklaa-konvehdit.

15. Laita kattilaan kuohukerma sekä hunaja ja kuumenna kiehuvaksi, mutta älä keitä.

16. Ota kattila pois liedeltä ja kaada kerma rouhitun suklaan päälle. Kääntele seos nuolijalla tasaiseksi ja anna jäähtyä huoneenlämpöiseksi.

17. Pistä seos jääkaappiin kylmettymään. (Omani oli huoneenlämmössä ensin noin tunnin ja sen jälkeen jääkaapissa noin tunnin. Seosta voi pitää myös hieman kauemmin jääkaapissa, jotta se on varmasti riittävän kylmää ja vaahdotus onnistuu. Jos et halua vaahdottaa täytettä, voit pistää sen hetkeksi jääkaappiin, kunnes se on sopivaa pursotettavaksi). 

18. Vaahdota seos sähkövatkaimella ja pursota täytettä kuoren pohjalle ja nosta toinen kuori päälle kanneksi. Täyttämisen jälkeen anna macaronien vetäytyä jääkaapissa ainakin muutama tunti ennen tarjoilua. Halutessasi koristele macaronit esimerkiksi pienillä piparkakuilla tai sulatetulla suklaalla ja koristelurakeilla.





Gingerbread Macarons

These Macarons fit perfectly to enjoy with glög. Whit this recipe I attended to make Dr. Oetker Golden Christmas Calendar. I was happy to hear that this recipe was elected to the door number 12. As a reward I got their products for baking and I am already looking forward to get to test them :) Gingerbread macaron base recipe is modified from Painted By Cakes blog macarons recipe, which I have used also in these delicious Chocolate Macarons with Orange Truffle Filling. This time I left the cocoa powder out and replace it with Christmas spices. Filling is made from lovely Fazer Christmas chocolates.


Macarons:
80g finely ground almonds
140g icing sugar
3ml ground cinnamon
2ml ground ginger
2ml ground ground cloves
pinch of ground cardamon 
20g caster sugar 
70g egg whites

Christmas Chocolate Filling:
60g whipping cream
3/4 teaspoon runny honey
120g Fazer Christmas chocolates


For decoration:
E.g. small gingerbreads or melted chocolate/royal icing and sprinkles like Dr. Oetker Silver 


Prepare macarons:

1. Sift trough thin sieve ground almonds in to bowl until you get 80g. Into sieve may left some peaces of ground almonds, throw those away.

2. Put icing sugar, finely ground almond and spices in a food processor and blend until ingredients are thoroughly combined. 

3. Sieve the mixture into a bowl. In the sieve may remain some almond pieces, throw them away.

4. Separate for another bowl 70g of egg whites from room temperature eggs. 

5. Whisk egg whites with electric mixer until the foam is spongy.

6. Add sugar gradually into foam whisking vigorously. Continue whisking until the foam is robust and forms sharp peaks.

7. Fold in gently with rubber spatula about 1/3 part of the almond mixture into the foam. Turn spatula around bowl and under the foam and then cutting over the foam.

8. Fold in the same way the rest of the almond mixture in two batches. Pattern becomes quite robust, but softens when you continue folding and cutting. 

9. When small amount of pattern dropped from the spatula flatten in about 30 seconds, stop turning, your pattern is ready.

10. Pour batter into cake decorating bag with diameter of 1 cm or 1,2 cm sized circular piping nozzle and pipe about 2-3 cm size pats on to baking paper over the baking tray. In order to break down the air bubbles, drop the baking tray a couple of times from about 10 cm height to the table.

11. Allow macarons stand at room temperature until the shells surface is dry to the touch approximately 30-60 mins. 

12. Bake macarons in the middle level of the oven in 140 C (284 F) degrees for about 15 minutes. Check after the first 5 minutes if the shells start to darken too much, and if needed adjust the temperature of the oven. (I made 2,5 cm macarons and I baked them in about 137 C degree oven for about 14 min).

13. Take macarons out of the oven when the foot which is formed at the bottom of the shell is not quake while gently lifting the shell from the baking paper. Let Macarons cool down over the baking tray about 10 minutes and then transfer them to cool on wire rack.



Christmas chocolate filling:

14. Chop finely Christmas chocolates into bowl. 

15. Put in a saucepan whipping cream and honey and bring to boil but don`t continue boiling.

16. Take saucepan out of the stove and pour over finely chopped chocolate. Fold in gently with rubber spatula until mixture is smooth and let it cool down for room temperature. 

17. Place mixture in the fridge for getting colder. (Mine was at room temperature first for about an hour, and then in the fridge for about an hour. The mixture can also be held a bit longer in the fridge, in order to be sure that it is enough cold for foam successfully. If you don`t want to whisk that mixture, you can put it in the fridge for a while, until it`s texture is suitable for piping).

18. Whisk mixture with electric mixer until creamy. Pipe filling top of the shell bottom and lift another shell as cover. Let macarons rest in the fridge at least few hours after filling before serving them. If you wish decorate your macarons for example with small gingerbreads or melted chocolate and sprinkles.

Vadelmainen juustokakku/ Cheesecake With Rasberries (20 cm)

Tämä on Mailiksen vadelmainen juustokakku, jonka resepti on otettu MTV.fi sivustolta. Appelsiinin- ja sitruunankuori tuovat kakuun mukavasti raikkautta ja vadelmat sopivat tähän loistavasti. Itse käytin kakkuun reilusti enemmän vadelmia kuin alkuperäisessä ohjeessa oleva 1dl täytteeseen ja 1dl kakun pinnalle. Tuohon keksipohjaan laittasin seuraavalla kerralla ehkä hieman vähemmän voita. Ennen tarjoilua annoin kakkuni vetäytyä jääkaapissa noin 2 vuorokautta, sillä makuhan paranee vanhetessaan :)


Keksipohja:
150g digestive-keksejä
100g normaalisuolaista voita

Täyte:
600g Philadelphiaa
100g ranskankermaa
1tl raastettua sitruunankuorta
1tl raastettua appelsiininkuorta
180g sokeria
3 kananmunaa
3rkl vehnäjauhoja
vadelmia

Päälle:
vadelmia


Valmista keksipohja:

1. Vuoraa halkaisijaltaan 20 cm:n irtopohjavuoka leivinpaperilla. Leikkaa leivinpaperista suikaleet irtopohjavuoan reunalle suojaksi. Itse vuoraan vuoan vielä ulkopuolelta foliolla, jotta uunini pysyy puhtaana. 

2. Hienonna keksit. Sulata voi ja sekoita se keksimurun joukkoon. Painele keksimuru vuoan pohjalle. Esipaista pohjaa 170 asteisessa uunissa keskitasolla noin 5 minuuttia.



Vamista täyte:

3. Pehmennä tuorejuusto. Sekoita keskenään tuorejuusto ja ranskankerma. Lisää sokeri, raastettu sitruunan- ja appelsiinin kuori sekä siivilöi joukkoon vehnäjauhot.

4. Lisää joukkoon kananmunat yksitellen voimakkaasti vatkaten.

5. Kaada puolet täytteestä keksipohjan päälle. Lisää täytteen päälle reilusti vadelmia ja kaada lopputäyte vadelmien päälle.

6. Paista 170 asteessa reilu tunti (paistoin omaani tunnin ja se vielä vähän "hytisi" keskeltä kun otin pois). Anna jäähtyä ja siirrä sitten kakku vetäytymään jääkaappiin yön ylitse (annoin kakkuni vetäytyä 2 vuorokautta).

7. Ennen tarjoilua koristele tuoreilla vadelmilla.



Cheesecake With Rasberries

This is Maili`s Cheese Cake With Rasberries, which recipe is from MTV.fi site. Orange and lemon zest are bringing freshness to the cake and rasberries fits brilliantly in this. I used rasberries far more into this cake than 100ml to the filling and 100ml top of the cake, what the orginal recipe adviced. Next time I will but abit less butter into the biscuit base. Before serving I let my cake set in the fridge about 2 days, while taste is getting better when it gets older :)


Biscuit base:
150g digestive-biscuit
100g normally salted butter

Filling:
600g Philadelphia cream cheese
100g Frensh cream
1 teaspoon grated lemon zest
1 teaspoon grated orange zest
180g sugar
3 egss
45ml all-purpose flour
fresh rasberries

Topping:
fresh rasberries

 
Prepare biscuit base:

1. Line a diameter of 20 cm baking tin with baking paper and cover the edges with baking paper strips. I cover my baking tin from the outside too with tinfoil so that my oven will stay clean.

2. Chop biscuits. Put fine biscuit crumbs in the bowl. Melt butter and pour over the crumbs, stir until smooth. Press crumbs on the bottom of the baking tin. Prebake biscuit base in the 170  C (338 F) degree oven for approx. 5 min.  



Prepare filling:

3. Soft cream cheese. Mix togeter cream cheese and frensh cream. Add sugar, grated lemon and orange zest. Sift in all-purpose flour.

4. Add eggs one by one, whisking strongly after each one.

5. Pour half ot the filling top of the cookie base. Add layer of rasberries. Pour remaining filling top of the rasberries and smoot surface.

6. Bake in 170 C (338F) degree oven in the middle level for about one hour or a bit more (I baked mine for one hour and when I took it out, cakes middle still jiggle a bit). Let it cool down and then put it in the fridge and let stand there over night (I let my cake stand 2 days in the fridge).

7. Before serving decorate with fresh rasberries.

Piimäkakku/ Sour Milk Cake (24 cm)

Piimäkakku on helppo tehdä ja vaihtelua kakkuun saa helposti vaihtamalla kakun päällystä. Tämän reseptin olen saanut mummultani. Alkuperäisestä ohjeesta olen täytteestä vähentänyt yhden liivatelehden ja keksipohjan teen hieman isompana. Keksipohja on melko paksu täytteeseen nähden, joten jos paksusta pohjasta ei pidä, kannattaa se tehdä hieman pienempänä (esim. 180g digestive-keksejä ja 75g voita).


Keksipohja:
225g digestive-keksejä
95g normaalisuolaista voita

Täyte:
4dl piimää
1 1/2dl (135g) sokeria
2tl vaniljasokeria
5 liivatelehteä (Käytin Meiran, yksi liivatelehti painaa 2g)
4rkl vastapuristettua sitruunamehua
2dl kuohukermaa

Päälle:
Esim. mangopilttiä, marjasurvosta, tuoreita marjoja ym.


Valmista pohja:

1. Vuoraa halkaisijaltaan 24 cm:n irtopohjavuoka leivinpaperilla. Irtopohjavuoan reunoille voit käyttää reunakalvoa tai leikata leivinpaperista suikaleet suojaksi.

2. Hienonna keksit. Sulata voi ja sekoita se keksimurun joukkoon. Painele keksimuru vuoan pohjalle. Laita pohja jääkaappiin vetäytymään täytteen valmistamisen ajaksi.
 


Valmista täyte:

3. Laita liivatelehdet likoamaan kylmään veteen noin 5-10 minuutiksi.

4. Sekoita kskenään piimä, sokeri ja vaniljasokeri.

5. Vaahdoita kerma ja pistä sivuun odottamaan.

6. Kuumenna sitruunamehu lähes kiehuvaksi. Purista liivatelehdistä ylimääräinen vesi pois ja laita ne pieneen kippoon. Kaada kuuma mehu liivatelehtien päälle ja sekoita tasaiseksi. Anna liivateliemen jäähtyä hieman samalla sekoitellen. Kaada liivateliemi ohuena nauhana piimäseoksen joukkoon kokoajan vatkaten.

8. Kääntele joukkoon vaahdoitettu kerma. Kaada täyte pohjan päälle ja anna hyytyä jääkaapissa yön yli.


8. Laita kakun päälle maun mukaan esim. mangopilttiä tai tuoreita marjoja (laitoin kakkuni päälle Semper mangopilttiä reilu 1 1/2 purkkia).



Sour Milk Cake 

Sour Milk Cake is easy to make and  you can easily make variation to the cake by changing topping. I have got this recipe from my grandmother. From the original filling I have reduced one gelatin leave and I make slightly bigger biscuit base. This biscuit base is quite thick compared to the amount of the filling so if you don`t like thick base it might be better to make it slightly smaller (e.g 180g digestive biscuit and 75g butter).  


Biscuit base:
225g digestive-biscuit
95g normally salted butter

Filling:
400ml sour milk
150ml (135g) sugar
2 teaspoon vanilla sugar
5 gelatin leave (I use Meira, one gelatin leave weights 2g)
60ml just squeezed lemon juice
200ml whipping cream

Topping:
E.g. mango puree, berry puree, fresh berries etc.


Prepare biscuit base:

1. Line a diameter of 24 cm baking tin with baking paper and cover the edges with baking paper.

2. Chop biscuits. Put fine biscuit crumbs in the bowl. Melt butter and pour over the crumbs, stir until smooth. Press crumbs on the bottom of the baking tin. Put the biscuit base in the fridge and let it set there for the duration of preparing the filling.



Prepare filling:

3. Soak gelatin leaves in cold water approx. 5 to 10 min.

4. Mix together sour milk, sugar and vanilla sugar.

5. Foam whipping cream and set aside.

6. Heat lemon juice almost boiling point. Squeeze the excess water from the gelatin leaves and put them in the small bowl. Pour lemon juice over the gelatin leaves and mix until smooth. Let the gelatin mixture to cool slightly while stirring. Pour the gelatin mixture into the sour milk mixture in a thin strip at the same time vigorously whisking.

8. Fold in whipped cream. Pour filling over the biscuit base and let it set in the fridge over night.


8. Put top of the cake layer of e.g mango puree or fresh berries (I put top of my cake Semper mango puree a bit over 1 1/2 can).

Mustikka-sitruunatorttu/ Blueberry-Lemon Pie (24 cm)


Aivan ihana torttu resepti Doron kakku blogista!!! :)
Alkuperäisessä ohjessa käytettiin muropohjaan mantelijauhoja, mutta koska niitä minulla ei kaapissa ollut niin laitoin mantelijauhetta.


Muropohja:
140g jääkaappikylmä normaalisuolainen voi
250ml (162g) vehnäjauhoja
125ml (n. 70g) mantelijauhetta
75ml (67g) sokeri
Loraus vettä (laioin 1,5rkl)
(paistamiseen kuivattuja herneitä)

Mustikkahillo:
2dl mustikoita
4rkl hillosokeria
ripaus kanelia
1/4-1/2 tl vaniljasokeria

Täyte:
2dl kuohukermaa
250g mascarponea
1tl raastettua sitruunankuorta
4tl sokeria
1tl vaniljasokeria
3 rkl sitruunamehua (tai maun mukaan)
noin 5dl mustikoita 

Valmista mustikkahillo:

1. Laita mustikat sekä hillosokeri kattilaan ja keitä noin 5-7 min. Ota kattila pois liedeltä ja mausta vaniljasokerilla sekä kanelilla. Anna jäähtyä.


Valmista muropohja:

2. Laita kulhoon vehnäjauhot, mantelijauhe ja sokeri. Sekoita tasaiseksi. Kuutioi joukkoon kylmä voi ja nypi sekaisin. Lisää vesi vähän kerrallaan ja sekoita tasaiseksi taikinaksi. Kääri taikina kelmuun ja anna levätä jääkaapissa noin 30 min.

3. Voitele ja jauhoita 24 cm piirakkavuoka. Kauli taikina jauhotetun leivinpaperin päällä hieman piirakkavuokaa isommaksi levyksi. Kumoa levy piirakkapohjan päälle leivinpaperin avustuksella ja painele taikina vuoan pohjalle sekä reunoille.

4. Pistele pohjaan kauttaaltaan reikiä haarukalla.

5. Laita pohjan päälle leivinpaperi ja sen päälle herneet. Paista uunin keskitasossa 200 C noin 15-20 min ja ota leivinpaperi ja herneet pois. Laita pohja takaisin uuniin ja paista vielä noin 5 min. Anna jäähtyä.


Valmista täyte:

6. Vaahdota kerma, mutta älä ihan loppuun asti. Pistä sivuun odottamaan.

7. Sekoita mascarpone notkeaksi. Lisää sokerit ja sitruunankuoriraaste ja vatkaa sekaisin. Lisää sitruunamehu ja vatkaa sekaisin. Lisää vaahdotettu kerma ja vatkaa sekaisin.


Kokoa torttu:

8. Levitä pohjan päälle mustikkahillo ja sen päälle mascarpone-sitruuna vaahto. Anna vetäytyä jääkaapissa muutama tunti. (Itse suosittelisin antaa tortun vetäytyä ja makujen tasaantua jääkaapissa useamman tunnin ajan. Annoin torttuni vetäytyä 6h jääkaapissa). Ennen tarjoilua laita pinnalle reilu kerros mustikoita.






Blueberry-Lemon Pie

Very lovely pie recipe from Doron kakku blog!!! :) 
In the original recipe almond flour was used in the base, but since I didn`t have it, I put ground almonds.


Base:
140g fridge cold normally salted butter
250ml (162g) all-purpose flour
125ml (n. 70g) ground almonds
75ml (67g) sugar
glob of water (I put 1 1/2 tablespoon)
(for baking dried peas)

Blueberry jam:
200ml blueberries
60ml jam sugar
touch of cinnamon
1/4-1/2 teaspoon vanilla sugar

Filling:
200ml whipping cream
250g mascarpone
1 teaspoon grated lemon zest
4 teaspoon sugar
1 teaspoon vanilla sugar
45ml just squeezed lemon juice (or for your taste)
about 500ml blueberries

Prepare blueberry jam:

1. Put blueberries and jam sugar into saucepan over the stove and cook for approx. 5 to 7 min, stir at the same time. Take out of the stove and add vanilla sugar and cinnamon. Let cool down completely. 


Prepare base:

2. Mix together all-purpose flour, ground almonds and sugar. Chop cold butter into a bowl and use your fingers to make mixture crumble. Add water a little at time and mix until smooth. Pour pie dough onto plastic wrap and wrap it well around. Put pie dough in the fridge and allow to stand for approx. 30 mins.

3. Butter and flour 24 cm pie tin. Roll out your dough on top of floured baking paper. Roll it to be slightly bigger sheet than your pie tin. Overturn the sheet with help of baking paper on top of the pie tin and press to the bottom and sides of your pie tin.

4. Stick the bottom all over with fork.

5. Put baking paper over the base and pour over it dried peas. Bake in 200 C (392F) degree oven approx. 15-20 mins. Take out of the oven and take out baking paper and peas. Put back in the oven and continue baking approx. 5 mins. Let cool down completely.


Prepare filling:

6. Whisk whipping cream until stiff but not yet completed. Set a side.

7. Soft mascarpone. Add sugar, vanilla sugar and lemon zest. whisk until smooth. Add lemon juice and whisk until smooth. Finally and whipping cream and whisk until smooth.


Assemble pie:

8. Spread top of the base blueberry jam and over it mascarpone-lemon filling. Let the pie stand in the fridge few hours before serving. (I would recommend pie stand and flavors set in the fridge several hours. I let my pie stand in the fridge 6 hours). Before serving put top of the filling proper layer of blueberries.

Jäädytetty suklaa Baileys kakku/ Frozen Chocolate Baileys Cake (15 cm)


























Tämä kakku on tehty hieman muokkaamalla alkuperältään Nina Lincolnin jäädytettyä suklaakakku reseptiä. Reseptin olen ottanut Soppa365.fi sivustolta. Pienensin keksipohjan sopimaan 15 cm kakkuvuokaan ja puolitin täytteen. Lisäsin täytteen joukkoon Chocolat Baileys Luxe likööriä, sillä kyseisen liköörin suurena ystävänä pitihän sitä tähänkin kakkuun kokeilla :) Kakku on varmasti hyvää myös ilman likööriä, tai maun mukaan voi kokeilla lisätä vaikka mitä. Huomioi, että kakun pitää antaa jäätyä pakastimessa yön yli!


Pohja: 
105g Digestive-keksejä
38g normaalisuolaista voita sulatettuna

Täyte:
100g Philadelphia tuorejuustoa
100g Fazer taloussuklaata
75g sokeria (jaettuna 45g ja 20g)
1/2tl vaniljasokeria
1 kananmuna
125ml kuohukermaa
75ml Chocolate Baileys Luxe likööriä 

Koristeluun:
esim. tummaasuklaata, mansikoita, Suklaa Baileys kermaa


Valmista keksipohja:

1. Vuoraa irtopohjavuoan (15 cm) pohja leivinpaperilla ja leikkaa leivinpaperista suikaleet suojaamaan reunoja.

2. Hienonna keksit. Sulata voi ja sekoita se keksimurun joukkoon. Painele keksimuru vuoan pohjalle. Laita pohja jääkaappiin vetäytymään täytteen valmistamisen ajaksi.
 


Valmista täyte: 

3. Sulata suklaa varovasti mikrossa ja anna jäähtyä hieman. 

4. Sekoita keskenään tuorejuusto, 45g sokeria ja vaniljasokeri.

5. Erota kanamunasta keltuainen ja lisää se tuorejuustoseoksen joukkoon. Säilytä valkuainen! 

6. Lisää tuorejouusto seoksen joukkoon suklaasula ja sen jälkeen 75ml Cholate Baileys Luxe likööriä.

7. Vatkaa valkuainen kovaksi vaahdoksi ja vatkaa sitten joukkoon 20g sokeria. Lisää seos tuorejuusto-suklaaseoksen joukkoon nuolijalla käännellen.

8. Vatkaa kerma vaahdoksi ja kääntele nuolijalla seokseen.
Kaada seos vuokaan keksipohjan päälle. Peitä kakun pinta tuorekelmulla niin, että kelmu on kakun pinnassa kiinni. Pistä pakastimeen jäätymään yön yli. 


9. Ota kakku pois pakkasesta ja koristele esim suklaarouheella, mansikoilla ja Suklaa Baileys kermalla (muistaakseni annoin kakun olla huoneenlämmössä noin 10-15 min ennen tarjoilua). 





Frozen Chocolate Baileys Cake

This cakes is made by modifying a bit Nina Lincoln Frozen Chocolate Cake recipe. I have took the recipe from Soppa365.fi site. I made biscuit base smaller so that it will fit 15 cm baking thin and I made only half of the filling. Into the filling I added Chocolat Luxe Baileys liqueur. I like the liqueur so of course I had to try it to this cake too :) Cake is certainly good even without liqueur, or you can try other liqueurs for your taste. Please note that the cake should be given to freeze in the freezer over night!


Biscuit base: 
105g Digestive-biscuit
38g normally salted butter

Filling:
100g Philadelphia cream cheese
100g dark chocolate (I use 44%)
75g sugar (divide 45g ja 20g)
1/2 teaspoon vanilla sugar
1 egg
125ml whipping cream
75ml Chocolate Baileys Luxe liqueur

Decoration:
e.g dark chocolate, strawberries, Chocolate Baileys Cream


Prepare biscuit base:

1. Line baking tin (15cm) with baking paper and cover the edges with baking paper.

2. Chop biscuits. Put fine biscuit crumbs into bowl. Melt butter and pour over the crumbs, stir until smooth. Press crumbs on the bottom of the baking tin. Put the biscuit base in the fridge and let it set there for the duration of preparing the filling.


Prepare filling: 
 
3. Melt dark chocolate in the microwave in low power and stir at times while melting. Let it cool down a bit.

4. Mix together cream cheese, 45g sugar and vanilla sugar.

5. Separate egg yolk from the egg white. Add egg yolk into cream cheese mixture. Save egg white!

6. Add melted dark chocolate into cream cheese mixture and after that add 75ml of Cholate Baileys Luxe liqueur.

7. Whisk egg white untill stiff. Whisk in 20g of sugar. Then fold foam in into cream cheese-chocolate mixture with rubber spatula.

8. Whisk whipping cream and fold into mixture with rupper spatula. Pour mixture top of cookie base. Cover surface with plastick warp by sticking it to the surface and place the cake in the freezer and let it be there over night.
  

9. Take cake out of freezer and decorate cake e.g with grated dark chocolate, strawberries and Chocolate Baileys Cream (I think I let my cake be in room temberature about 10 to 15 min before serving)

Appelsiinikuppikakut vadelmilla/ Orange Cupcakes With Rasberries


Vadelma ja appelssiini sopivat loistavasti yhteen. Pohjan ohjeen olen ottanut Emerald City blogista. Päädyin tekemään appelsiini leivokset muffinssipapereilla vuorattuun vuokaan tiskaamisen helpoittamiseksi ;) joten nämä kulkevat nyt minulla appelsiinikuppikakku nimellä. Kuorrutteeksi halusin kokeilla appelsiinirahkan ja kerman sekoitusta ja se sopikin hyvin tuon pohjan päälle. Herkun kruunasivat vielä itse poimitut vadelmat. Yksinkertaista mutta hyvää :)


Pohja:
200g normaalisuolaista voita
2dl (180g) sokeria
1tl vaniljasokeria
3 kananmnaa
3dl (195g) vehnäjauhoja
1 1/2tl leivinjauhetta
2tl raastettua appelsiinin kuorta

Kostutus:
1 1/2dl vastapuristettua appelsiini mehua
20g sokeria

Kuorrutus:
200g Valion maustettu rahka appelsiini
2dl kuohukermaa
1tl raastettua appelsiininkuorta
tuoreita vadelmia


Tee näin:

1. Vaahdota voi, sokeri ja vaniljasokeri.

2. Lisää munat joukkoon yksitellen voimakkaasti vatkaten. Lisää sitten appelsiinin kuori.

3. Sekoita keskenään vehnäjauho ja leivinjauhe. Siivilöi kuivat ainet voi-sokriseokseen sopivissa erissä ja kääntele nuolijalla tasaiseksi.

4. Vuoraa muffinipelti papereilla (tai voitele kolot ja jauhoita) ja täytä koloista 3/4 osaa. Paista uunin keskitasolla 200 asteessa n. 10-15 min.

5. Valmista kostutusliemi sekoittamalla appelsiinimehu ja sokeri keskenään. 

6. Painele lämpöisten pohjien päälle hammastikulla reikiä ja lusikoi päälle kostutuslientä (en käyttänyt ihan kaikkea lientä). Anna muffinssien jäähtyä. Laitoin muffinini ilmatiiviiseen rasiaan ja annoin vetäytyä jääkaapissa yön ylitse.

7. Valmista kuorrute vaahdottamalla kerma lähes valmiiksi. Vakaa joukkoon appelssiinirahka ja appelssiinin raastettu kuori. Pursota täytettä pohjien päälle ja koristele tuoreilla vadelmilla.



Orange Cupcakes With Rasberries

Raspberry and orange fits great together. Cupcake base recipe is from Emerald City blog. In the orginal recipe was made orange pastries but I ended up useing cupcake liners so it is easier wash the muffin pan ;) so I named these as orange cupcakes. As frosting I wanted to try a mixture of whipping cream and orange flavored quark. This mixture was fitting well with the cupcake base. And delicasy was dressed with self -picked raspberries. Simple but good :)


Base:
200g normally salted butter
200ml (180g) sugar
1 teaspoon vanilla sugar 
3 eggs
300ml (195g) all-purpose flour
1 1/2 teaspoon baking bowder
2 teaspoon grated orange zest

For moisten:
150ml just squeezed orange juice
20g sugar

Frosting:
200g Orange flavored quark (I use this)
200ml whipping cream
1 teaspoon grated orange zest
fresh rasberries


Do this:

1. Whisk together butter, sugar and vanilla sugar with electric mixer.

2. Add eggs one by one, whisking strongly after each one. Then mix in orange zest.

3. Mix together all-purpos flour and baking powder. Add flour mixture to your foam gradually through the sieve and fold in gently.

4. Line muffin pan with cupcake liners (or butter and flour well) and fill 3/4 of the cupcake liners. Bake cupcakes in 200 C (392F) degree in the middle level of the oven for 10 to 15 min.

5. Prepare moisturing mixture. Mix together orange juice and sugar. Mix until smooth. 

6. Using a toothpick poke holes in the top of the warm cupcakes. With small spoon, spoon moisturing mixture top of the cupcakes (I didin`t use all the mixture, litle was left over). Let cupcakes cool down. I put my cupcakes in air tight container and let them sit in the fridge over night.

7. Prepare frosting. Whisk whipping cream untill stiff but not yet completed. Whisk in orange flavored quark and orange zest. Pipe frosting top of cupcakes and decorate with fresh rasberries.

Mutakakku Baileys Orange Truffle kermalla/ Mud Cake Whit Baileys Orange Truffle Cream (24 cm)


























Sain vihdoinkin käsiini pullon Baileys Orange Trufflea ja kokeilin sitä aikaisemmin tekemääni mutakakkuun. Ohje mutakakkuun löytyy täältä. Korvasin Suklaa Baileys kerman liköörin Baileys Orange Truffle -liköörillä ja päälle pursotin appelssiinitryffeliä, jonka resepti löytyy täältä. Päälle rouhin vielä reilu puoli patukkaa appelssiini daimia. Oli kyllä herkkua!!! Ihan kaikkea mutakakkua ei kerralla syöty ja kun mutakakku kermoineen oli saanut olla yön yli jääkaapissa, oli kerman appelssiininen maku vielä ihanasti vahvistunut :)


Mud Cake With Baileys Orange Truffle Cream

I finally got in my hands a bottle of Baileys Orange Truffle liqueur and I used it mud cake recipe which I have done before. Recipe for the mud cake can be found here. I replaced the Chocolate Baileys cream liqueur with Baileys Orange Truffle liqueur and onto the top I put orange truffle, whose recipe you can found here. Onto top I also chopped some orange flavored Daim candy. It was delicious!!! We didn`t eat all mud cake at once and when the mud cake with its cream had been left overnight in a fridge, was orange flavor in the cream become nicely stronger :)

Mansikka-vadelmakakku/ Strawberry-Rasberry Cake (24 cm)


Tämän pirteän reseptin olen saanut ystävältäni. Reseptiä olen muokannut lisäämällä keksipohjan, mansikan ja vadelman määrää.


Keksipohja:
225g digestive-keksejä
95g normaalisuolaista voita

Täyte:
200g ranskankermaa
100g kermaviiliä
1dl (90g) sokeria
2tl vaniljasokeria
5dl mansikkasurvosta
45ml mehua mansikoista tai vettä
5 liivatelehteä (käytän Meiran, yksi liivatelehti painaa 2g)
2dl kuohukermaa

Päällinen:
3dl vadelmasurvosta
3 liivatelehteä (käytän Meiran, yksi liivatelehti painaa 2g)
30ml mehua vadelmista tai vettä
30ml sokeria tai maun mukaan

Koristeluun:
tuoreita vadelmia
mansikkakermaa, ohje löytyy täältä


Valmista keksipohja:

1. Vuoraa halkaisijaltaan 24 cm:n irtopohjavuoka leivinpaperilla. Irtopohjavuoan reunoille voit käyttää reunakalvoa tai leikata leivinpaperista suikaleet suojaksi.

2. Hienonna keksit. Sulata voi ja sekoita se keksimurun joukkoon. Painele keksimuru vuoan pohjalle. Laita pohja jääkaappiin vetäytymään täytteen valmistamisen ajaksi.




Valmista täyte:

3. Laita 5 liivatelehteä likoamaan kylmään veteen noin 5-10 minuutiksi.

4. Sekoita keskenään ranskankerma, kermaviili, sokeri ja vaniljasokeri.

5. Jos mahdollista ota sulaneista pakastemansikoista 45ml mehua talteen. Tämän jälkeen soseuta mansikat sauvasekoittimella. Lisää 5dl mansikkasurvosta seoksen joukkoon.

6. Vatkaa kerma vaahdoksi ja pistä sivuun odottamaan.

7. Kuumenna mansikkamehu kiehuvaksi. Purista liivatelehdistä ylimääräinen vesi pois ja laita ne pieneen kippoon. Kaada kuuma mehu liivatelehtien päälle ja sekoita tasaiseksi. Anna liivateliemen jäähtyä hieman samalla sekoitellen. Kaada liivateliemi ohuena nauhana seoksen joukkoon kokoajan vatkaten.

8. Kääntele joukkoon vaahdoitettu kerma. Kaada täyte pohjan päälle ja anna hyytyä jääkaapissa noin 5 tuntia.


Valmista päällinen:

9. Laita 3 liivatelehteä likoamaan kylmään veteen noin 5-10 minuutiksi.

10. Jos mahdollita ota sulaneista pakastevadelmista 30ml mehua talteen. Soseuta vdelmat sauvasekoittimella ja mittaa 3dl sosetta kulhoon.

11. Mausta vadelmasose maun mukaan sokerilla.

12. Kuumenna vadelmamehu kiehuvaksi. Purista liivatelehdistä ylimääräinen vesi pois ja laita ne pieneen kippoon. Kaada kuuma mehu liivatelehtien päälle ja sekoita tasaiseksi. Anna liivateliemen jäähtyä hieman samalla sekoitellen. Kaada liivateliemi ohuena nauhana vadelmasurvoksen joukkoon kokoajan voimakkaasti sekoittaen.

13. Kaada vadelmasurvos varovasti kakun päälle. Anna kakun vetäytyä jääkaapissa vähintään yön ylitse.

14. Koristele esim. tuoreilla vadelmilla ja mansikkakermalla.



Strawberry-Rasberry Cake

I have got this fresh cake recipe from my friend. I have modify this recipe by making bigger biscuit base an adding amount of strawberry and rasberry.


Biscuit base:

100g sour cream
100ml (90g) sugar
2 teaspoon vanilla sugar
500ml mashed strawberries
45ml juice from the rasberries or water
5 gelatin leaves (I use Meira, one leave weights 2g)
200ml whipping cream

Topping:
300ml mashed rasberries
3 gelatin leaves (I use Meira, one leave weights 2g)
30ml juice from rasberries or water
30ml sugar or for your taste

Decoration:
fresh rasberries
Strawberry cream, you can find recipe from here


Prepare biscuit base:

1. Line a diameter of 24 cm baking tin with baking paper and cover the edges with baking paper.

2. Chop biscuits. Put fine biscuit crumbs in the bowl. Melt butter and pour over the crumbs, stir until smooth. Press crumbs on the bottom of the baking tin. Put the biscuit base in the fridge and let it set there for the duration of preparing the filling.



Prepare filling:

3. Soak 5 gelatine leaves in cold water approx. 5 to 10 min.

4. Put french cream, sour cream, sugar and vanilla sugar into bowl. Mix until smooth.

5. If possible, before mashing melted strawberries, set aside 45ml of strawberry juice. Mash melted strawberries with hand blender. Measure 500ml strawberry mash into the mixture.

6. Foam whipping cream and set aside.

7. Heat strawberry juice untill boiling. Squeeze the excess water from the gelatine leaves and put them in the small bowl. Pour strawberry juice over the gelatine leaves and mix until smooth. Let the gelatine mixture to cool slightly while stirring. Pour the gelatin mixture into the mixture in a thin strip at the same time vigorously whisking.

8. Fold in whipped cream. Pour filling over the biscuit base and let it set in the fridge aprox 5 hours.


Prepare topping:

9. Soak 3 gelatine leaves in cold water approx. 5 to 10 min.

10. If possible, before mashing melted rasberries, set aside 30ml of rasberry juice. Mash melted rasberries with hand blender. Measure 300ml rasberry mash into bowl.

11. Add sugar for your taste into the rasberry mash.

12. Heat rasberry juice untill boiling. Squeeze the excess water from the gelatine leaves and put them in the small bowl. Pour rasberry juice over the gelatine leaves and mix until smooth. Let the gelatine mixture to cool slightly while stirring. Pour the gelatin mixture into the rasberry mash in a thin strip at the same time vigorously mixing.

13. Pour rasberry mash gently top of the cake. Let it set in the fridge atleast over night.

14. Decorate the cake e.g with fresh rasberries and strawberry cream.
